Ingredients
  • 3 tbls. butter
  • 1/4 cup jalapenos, seeded and finely diced
  • 1/2 cup leeks, cleaned, and cut into 1/2 inch slices
  • 2 cloves garlic, finely chopped
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/4 cups heavy cream
  • 1 cup half & half
  • 4 oz. Cheddar cheese, grated
  • 4 oz. Monterey Jack cheese, grated
  • 4 large russet potatoes, peeled and sliced into thin rounds

Directions
  1. Preheat oven to 350
  2. Melt butter in saucepan over medium heat
  3. Add jalapenos, leeks, garlic, salt and pepper and saute until tender
  4. Add cream and half & half, bring to simmer
  5. Remove pan from stove and stir in cheeses, stirring to blend
  6. In large mixing bowl, carefully blend cheese mixture with potatoes
  7. Spray a 9x13 baking dish with non stick spray
  8. Pour potato mixture into baking dish
  9. Cover tightly with foil
  10. Bake 45 minutes
  11. Remove foil and bake an additional 15 minutes to brown
