Cooking Spray

1 medium Spanish onion, sliced

1 medium green bell pepper, cut into strips

1 tsp. Ground cumin

½ tsp. Chili powder

½ tsp. Salt

½ tsp. Freshly ground black pepper

4 ( 2 ½ oz ) sliced cooked lean sirloin, cut into ¼-inch strips

¼ cup fresh lime juice

8 small fajita-style flour tortillas

2 cups thinly sliced iceberg lettuce

1/3 cup ( 1 ½ oz ) shredded reduced-fat cheddar cheese

½ cup Salsa

Directions

1)Place a large cast-iron skillet over high heat until hot. Coat skillet with cooking spray, and add onion and bell pepper; saute 5 minutes or until tender and lightly brown. Add cumin, chili powder, salt, and black pepper; saute 1 minute. Add sirloin and saute 2 minutes. Remove from heat, and stir in lime juice.

2)Heat tortillas according to package directions. Divide meat mixture evenly among tortillas; top evenly with lettuce, cheese, and salsa. Fold tortillas in half. Serve.
