Pork In Hot Garlic Sauce

- 1 lb. thin-cut boneless chops, shredded shopping list
- Marinade: shopping list
- 1 T. cornstarch shopping list
- 1/2 T. sugar shopping list
- 1 T. dark soy sauce shopping list
- 1 T. sherry shopping list
- 6 green onions shopping list
- 1 red bell pepper shopping list
- 4 quarter-sized slices ginger, minced shopping list
- 4 cloves garlic, minced shopping list
- 3 T. chili paste with garlic shopping list
- 1 T. dark soy sauce shopping list
- 1 T. black vinegar shopping list
- 1/2 T. sesame oil shopping list
- 1 c. oil shopping list
How to make it
- Put the pork shreds in a large bowl. Add the marinade ingredients and mix thoroughly. Let sit at least 30 minutes.
- In the meantime, prepare the green onions and bell pepper. Clean and trim the green onions, and pull off any "soft" green leaves. Thinly slice, then mince, the white part, and put on a plate with the ginger. Cut the green leaves into 1/2-inch pieces and put on a plate. Stem, seed, and shred the bell pepper, and put them on another plate.
- Add the cup of oil to a wok over very high heat. When the oil is almost smoking hot, stir the pork, then add it all at once. Stir-fry in the hot oil until the pork turns white. Drain and reserve the pork, reserving 1 T. oil.
- Heat the oil over very high heat in the wok, and add the ginger and white part of the green onions. Stir-fry for about 15 seconds, then add the bell pepper shreds. Stir-fry for about 1-2 minutes, until the peppers start to blister.
- Add the chili paste, soy sauce, and vinegar. Add the pork and the green onion leaves. Flip for about a minute, add the sesame oil, and serve. You can use less chili paste with garlic if you don't want it quite so hot.
