How to make it

  • 1)Preheat oven to 375º.
  • 2)Cook potatoes in boiling water 15 minutes or until tender. Drain well, and mash; set aside.
  • 3)Combine 3 Tbs. water and leek in a non-stick skillet; cook over medium heat 4 minuter or until leek is soft and water evaporates, stirring constantly. Combine leek, potatoes, salmon, 1 ½ Tbs. mint, horseradish, and pepper; stir well. Shape mixture into 8 patties.
  • 4)Combine remaining 1 Tbs. mint, breadcrumbs, and cheese; dredge salmon patties in mixture. Place patties on a baking sheet coated with cooking spray. Bake at 375º for 20 minutes, turning after 10 minutes.
