MINTED SALMON BURGERS

- Ingredients: shopping list
- 4 ( 10oz ) baking potatoes, peeled and cubed shopping list
- 3 Tbs. water shopping list
- 1 medium leek, diced shopping list
- 2 ( 7 ½ oz ) cans pink salmon, drained and flaked shopping list
- 2 ½ Tbs. minced fresh mint, divided shopping list
- 2 tsp. Prepared horseradish shopping list
- ½ tsp. Freshly ground pepper shopping list
- 1/3 cup dry breadcrumbs shopping list
- 2 Tbs. grated parmesan cheese shopping list
- Non-Stick cooking spray shopping list
How to make it
- 1)Preheat oven to 375º.
- 2)Cook potatoes in boiling water 15 minutes or until tender. Drain well, and mash; set aside.
- 3)Combine 3 Tbs. water and leek in a non-stick skillet; cook over medium heat 4 minuter or until leek is soft and water evaporates, stirring constantly. Combine leek, potatoes, salmon, 1 ½ Tbs. mint, horseradish, and pepper; stir well. Shape mixture into 8 patties.
- 4)Combine remaining 1 Tbs. mint, breadcrumbs, and cheese; dredge salmon patties in mixture. Place patties on a baking sheet coated with cooking spray. Bake at 375º for 20 minutes, turning after 10 minutes.
