Poultry Honey Brine Recipe
I always brine my turkey prior to cooking. The brine enhances the flavor of the bird and also results in super moist meat.

Ingredients
  • 1 gallon water
  • 1/2 c kosher salt
  • 1 c honey
  • 3 bay leaves
  • 1/4 tsp cloves
  • 1/2 tsp pickling spice
  • 1/2 c molasses
  • 1 c bourbon

Directions
  1. Combine all ingredients EXCEPT honey and molasses and bring to boil.
  2. Honey breaks down at 160ยบ so you must add this after the cooking.
  3. Let brine settle back to room temp. Add honey and molasses and stir
  4. in well.
  5. If injecting, inject in breasts, thighs and legs...about 2 oz. in each.
  6. Let sit refrigerated for 24 hours.
  7. If soaking, submerge entire bird in brine for 24 hours under refrigeration.
  8. Rinse the bird in cool water and allow to air dry for a few hours prior to stuffing.
