Almond Triangles

- 2/3 c sugar shopping list
- 1/8 tsp ground cinnamon shopping list
- 2-1/2 c flour shopping list
- 1/4 tsp salt shopping list
- 2 sticks (1 c) cold unsalted butter,cut up shopping list
- 2 lg. eggs,yolk and white seperated,white slightly beaten shopping list
- 1 tsp almond extract shopping list
- 2/3 c sliced almonds shopping list
How to make it
- Heat oven to 350 degrees. Line 13x9" baking pan with nonstick foil,letting foil extend about 2" above pan on two sides.
- Mix 1 Tb sugar and the cinnamon in a small bowl. Set aside.
- In food processor,pulse remaining sugar,the four and salt until blended. Add butter and pulse until mixture resembles coarse crumbs. Add yolks and extract and pulse till just mixed.
- Press dough into pan. Brush with egg white until moistened(you won't use all of it). Sprinkle with almonds,then sugar-cinnamon mixture,gently pressing into dough.
- Bake 20-25 mins until lightly browned. Cool 10 mins. in pan on wire rack.
- Cookies are easier to cut while slightly warm. Lift from pan by ends of foil onto cutting board. Cut into 4 lengthwise,then 6 crosswise strips. Cut each bar diagonally in half to yield 2 triangles
- Remove from foil to rack to cool completely.
