Sweet Potato Molasses Cookies

I haven't tried this recipe but it looked interesting.... so I thought I would post it..the recipe is from the Sweet potato Council..

Cream together the margarine and sugar.
Add egg and beat thoroughly.
Blend in the molasses and sweet potatoes.
Add the dry ingredients that have been sifted together, then the milk. Mix thoroughly.
Drop from a teaspoon 2 inches apart on a well-greased baking sheet.
Bake at 375 degrees for 12 to 15 minutes or until set and lightly brown

I've made molasses cookies before and they were great. I think the combination with the sweet potato would be very tasty! I'm gonna try it...let ya know!
