Jks Arroz Con Pollo Recipe
See my sofrito recipe for the sofrito in this dish. some prefer to cook the olives in the dish, i prefer to mix it in at the end with the hot sauce.

Ingredients
  • 1 whole chicken cut up
  • olive oil - enough to brown the chicken
  • 1/2 c. flour
  • 1 packet sazon
  • 3 tbs adobo
  • 2 c rice
  • 1/2 c sofrito
  • 3 c water
  • 1 15-oz can diced tomatoes, drained
  • 1/2 tsp oregano
  • salt and pepper to taste
  • 1/2 c chopped spanish olives
  • hot sauce

Directions
  1. preheat oven to 375
  2. season chicken liberally with adobo
  3. add sazon to season the flour and coat chicken
  4. heat olive oil in a large bottom pan that can go in the oven with a lid
  5. brown chicken in batches and remove and set on a plate when brown
  6. when all chicken is browned add your sofrito to your pan and saute
  7. add your rice
  8. add your water
  9. add your tomatoes and oregano
  10. bring to a boil
  11. cover and place in oven for 30 - 40 minutes
  12. remove from oven and let rest
  13. fluff rice
  14. top with olives and hot sauce
