How to make it

  • preheat oven to 375
  • season chicken liberally with adobo
  • add sazon to season the flour and coat chicken
  • heat olive oil in a large bottom pan that can go in the oven with a lid
  • brown chicken in batches and remove and set on a plate when brown
  • when all chicken is browned add your sofrito to your pan and saute
  • add your rice
  • add your water
  • add your tomatoes and oregano
  • bring to a boil
  • cover and place in oven for 30 - 40 minutes
  • remove from oven and let rest
  • fluff rice
  • top with olives and hot sauce
