How to make it
- For the dough
- Take luke warm water in a cup, dissolve yeast and sugar in it and keep it aside.
- Allow it to rise. It normally takes only about 5-10 minutes to rise well.
- Sift flour, some baking soda (to bring the crispiness) and salt into a bowl and add yeast- sugar mixture, yogurt and half of the clarified butter into it.
- Mix together to form soft dough. Again knead it on a flat surface to make it soft.
- Allow it to stand for almost 3-4 hr in warm place.
- Divide into big lemon sized balls. Flatten (extreme) each ball using hand. Stretch with hand or rolling pin and make 6 inch in radius.
- Baste it with little oil in the centre.
- For the filling
- Meat Mix
- Fry some sausages and squeeze the meat out.
- Lightly fry the sausage meat, mutton keema with some garlic powder and finely chopped onion
- In a bowl mix mozzarella cheese and some cheddar, sausage meat mix, and small strip of pineapple, some flakes of paprika.
- (In fact I can use small bits of bacon, ham, chicken mince, for veg i can use soya bits, cottage cheese etc)
- sprinkle lightly with Indian garam masala (which available in Indian store)
- Now put this filling n the centre of the bread. Pull the edges of the paratha. We use rolling pin and make it a flatten and give it a round shape.
- Fold all the four corners to the centre. Seal the edges pressing with dabbing plain water.
- For Frying
- Now heat a skillet on the stovetop.
- Put 2 tbsp of oil
- Place the filled dough on it, and cook it on medium heat.
- Within few minutes, it will puff up. Each side needs to be fried till golden brown.
- Now take the Indian Pizza/paratha on large serving plate. Cut it diagonally in four.
- In small bowl take some 2 tbsp of mustard sauce mix with 2 tsp of ketchup add dash of tabasco.
- Sprinkle the sauce over the pizza/paratha.
- Add some green coriander for garnish.
