Chicken is so versatile, but can be boring. So, as I was bored one day, I came up with this idea. Go figure Cheese Nips were on sale.

Ingredients
  • 4 boneless chicken breasts, rinsed and and dried.
  • 8 ounces sour cream
  • 1/3-1/2 box of Cheese Nips crackers, crushed
  • 1/4 to 1/4 cup diced scallions
  • 1/2 cup melted butter

Directions
  1. Blend sour cream and chives.
  2. Dip chicken into sour cream mixture.
  3. Roll into crushed cheese crackers.
  4. Place chicken into glass baking dish and drizzle with melted butter.
  5. Bake at 350 degrees for 40-50 minutes, uncovered
