Baked meatloaf. Half the mixture can be frozen fand cooked or another meal.

Ingredients
  • 3 lbs ground beef
  • 2 large eggs lightly beaten
  • 1 small onion finely minced
  • a nice pinch of ground cumin
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup ketchup
  • 1 TBS. Worcestershire sauce
  • 1/3 cup milk
  • 1 3/4 cups rolled oats.
  • 1/4 cup ketchup mixed with 2 TBS. Worcestershire for basting.

Directions
  1. Mix everything, except the 1/4 ketchup and 2 TBS. Worcestershire, in a bowl. Form loaf and place on a roasting pan grid. Bake for 2 hours at 350 degr.
  2. Begin basting after the 1st 45 min. Allow to rest 15 min before cutting

Sounds kinda like my meatloaf but we use ground turkey. I also add an envelope of dry onion mushroom soup to mine :) everything else is really close. Meatloaf is a good comfort food.
