PEACH COFFEE CAKE

- 1 cup butter shopping list
- 1 3/4 cup sugar shopping list
- 4 eggs shopping list
- 3 cups all purpose flour shopping list
- 1 1/2 tsp salt shopping list
- 1 1/2 tsp baking powder shopping list
- 1 can peach pie filling shopping list
- Icing: shopping list
- 1 1/4 cup confectioner's sugar shopping list
- 1/2 teaspoon almond extract shopping list
- 3 to 4 tablespoons milk shopping list
How to make it
- In a large mixing bowl, cream butter and sugar until fluffy. Add eggs, on at a time, beating well after each addition.
- Combine the flour, salt and baking powder; add to creamed mixture and beat just until combined.
- Spread 3 3/4 cups of batter into a greased 15"x10"x1" baking pan. Carefully spoon pie filling to within 1 inch of edges. Spoon remaining batter over filling
- Bake at 350 degrees for 20-25 minutes, or until toothpick inserted near center comes out clean. (if edges brown too quickly cover loosely with foil) Cool on wire rack.
- In a small bowl combine icing ingredients. drizzle over coffee cake.
