Scrambled Tofu with Onion and Tomato

- 2 T olive oil* shopping list
- 1/2 block of extra firm tofu (I like nasoya organic tofu best) shopping list
- 1/2 onion, chopped shopping list
- 1/2 tomato, chopped shopping list
- 1/2 t onion powder shopping list
- 1/2 t garlic powder shopping list
- 1/4 t turmeric shopping list
- 2 T nutritional yeast shopping list
- salt and pepper to taste shopping list
How to make it
- Put the olive oil in a pan and turn the heat to medium-high.
- Drain the tofu and blot it with a paper towel.
- Crumble the tofu into the pan and saute until it's nicely golden-brown.
- Push the tofu to the sides of the pan and add the chopped onion and saute until translucent.
- Add the tomato and stir the mixture together.
- Stir in the onion powder, garlic powder and turmeric and mix well.
- Fold in the nutritional yeast, making sure that everything is well coated. Let it cook for about a minute more, then plate.
- Season to taste with salt and pepper.
