How to make it

  • 1. Bring rice and water to a boil, turn down to low heat and cover, simmer for 15 minutes. (You can add a bit more water if it all cooks out before the time is up)
  • 2. Add sugar, coconut milk, and dates. Stir together, then cook over low heat until most of liquid is absorbed, about 10 minutes.
  • 3. Add shredded coconut and allspice and remove from heat. Let cool and refrigerate. Serve cold for dessert, snacks, or a delicious breakfast.
  • Makes about 5 cups
