Coconut Date Rice Pudding Recipe
I just came up with this dish, since I had leftover coconut milk on hand. I love how the sweet coconut tastes with little bits of dates. I serve this as a dessert but it also makes a yummy breakfast.

Ingredients
  • 1 cup white rice
  • 2 cups water
  • 3/4 cup sugar
  • 3/4 cup dried dates, chopped
  • 1-1/3 cup coconut milk
  • 1 cup shredded sweetened coconut
  • 1/8 teaspoon allspice

Directions
  1. 1. Bring rice and water to a boil, turn down to low heat and cover, simmer for 15 minutes. (You can add a bit more water if it all cooks out before the time is up)
  2. 2. Add sugar, coconut milk, and dates. Stir together, then cook over low heat until most of liquid is absorbed, about 10 minutes.
  3. 3. Add shredded coconut and allspice and remove from heat. Let cool and refrigerate. Serve cold for dessert, snacks, or a delicious breakfast.
  4. Makes about 5 cups

I am also going to try this using Cranberrys instead of dates as with the allspice I am going to try cinnamon.
