How to make it

  • Cut chicken into 1" cubes and place half of the chicken into a large shallow baking dish.
  • Sprinkle with 1/2 tsp salt.
  • Sprinkle uncooked rice over chicken.
  • Place the rest of the chicken over the rice layer.
  • Sprinkle with remaining 1/2 tsp salt.
  • Sprinkle with coconut and then layer pineapple chunks over coconut.
  • Dot with marmalade.
  • Mix water, lemon juice, and pineapple juice and pour over all.
  • Pour melted butter and soy sauce all over baking dish.
  • Sprinkle with ginger.
  • Bake, covered, in a 350 degree oven for 40 minutes or until chicken and rice are done.
  • Remove cover and brown in oven for 5 minutes.
