Ingredients
  • 3 to 4 boneless chicken breasts
  • 1 tsp salt
  • 1 1/2 instant rice, uncooked
  • 3 1/2 oz of coconut
  • 20 oz can pineapple chunks, drained (reserve liquid)
  • 3/4 cup water
  • 2 tsp lemon juice
  • 4 Tbsp orange marmalade
  • 4 Tbsp butter, melted
  • 4Tbsp soy sauce
  • 2 1/2 tsp ground ginger

Directions
  1. Cut chicken into 1" cubes and place half of the chicken into a large shallow baking dish.
  2. Sprinkle with 1/2 tsp salt.
  3. Sprinkle uncooked rice over chicken.
  4. Place the rest of the chicken over the rice layer.
  5. Sprinkle with remaining 1/2 tsp salt.
  6. Sprinkle with coconut and then layer pineapple chunks over coconut.
  7. Dot with marmalade.
  8. Mix water, lemon juice, and pineapple juice and pour over all.
  9. Pour melted butter and soy sauce all over baking dish.
  10. Sprinkle with ginger.
  11. Bake, covered, in a 350 degree oven for 40 minutes or until chicken and rice are done.
  12. Remove cover and brown in oven for 5 minutes.
