How to make it

  • Prepare your mashed potato by boiling potatos until soft and mashing until there are no more lumps remaining.
  • Beat the potato well then beat in the butter (or low fat spread), the flour and a pinch of salt.
  • Turn out onto a lightly floured surface and pat out to a round about 1cm thick.
  • Cut into rounds with a 3 inch biscuit cutter, reknead the trimmings and repeat.
  • Cook the potato cakes in a non stick frying pan for about 3 mins on each side until golden brown.
  • Serve with butter (or low fat spread)
