Irish Potato Cakes

- 450g well mashed cooked potato shopping list
- 50g butter (or low fat spread) plus a little extra to serve shopping list
- 50g wholemeal flour shopping list
How to make it
- Prepare your mashed potato by boiling potatos until soft and mashing until there are no more lumps remaining.
- Beat the potato well then beat in the butter (or low fat spread), the flour and a pinch of salt.
- Turn out onto a lightly floured surface and pat out to a round about 1cm thick.
- Cut into rounds with a 3 inch biscuit cutter, reknead the trimmings and repeat.
- Cook the potato cakes in a non stick frying pan for about 3 mins on each side until golden brown.
- Serve with butter (or low fat spread)
