How to make it

  • Preheat oven to 375 degrees.
  • Remove tops, seeds and membranes from peppers.
  • Crumble sausage meat into skillet and saute with chopped onion.
  • Drain fat and stir in cooked rice, 1 1/2 cups cheese and chopped tomato.
  • Fill peppers with sausage mixture and top with remaining cheese.
  • Arrange in a 9" square pan and add 1/4 cup water around peppers.
  • Bake 30 minutes until peppers are tender.
