Country Style Stuffed Peppers Recipe
A nice combination of cheese, rice and pork stuffed into a pepper! Quick to prepare and only 30 minutes to bake.

Ingredients
  • 4 green, red or yellow peppers
  • 8 oz pork sausage
  • 1/2 cup chopped onion
  • 1 1/2 cups cooked rice
  • 2 cups shredded cheddar
  • 1 medium tomato, chopped

Directions
  1. Preheat oven to 375 degrees.
  2. Remove tops, seeds and membranes from peppers.
  3. Crumble sausage meat into skillet and saute with chopped onion.
  4. Drain fat and stir in cooked rice, 1 1/2 cups cheese and chopped tomato.
  5. Fill peppers with sausage mixture and top with remaining cheese.
  6. Arrange in a 9" square pan and add 1/4 cup water around peppers.
  7. Bake 30 minutes until peppers are tender.
