Carrot Fruitcake

- 1-1/2 cups chopped nuts shopping list
- 1 cup chopped mixed candied fruit shopping list
- 1 cup chopped dates shopping list
- 1 cup raisins shopping list
- 3 cups all-purpose flour, divided shopping list
- 2 cups sugar shopping list
- 1-1/2 cups canola oil shopping list
- 4 eggs shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons baking soda shopping list
- 2 teaspoons ground cinnamon shopping list
- 1 teaspoon salt shopping list
- 3 cups finely shredded carrots shopping list
- confectioners' sugar icing, optional shopping list
How to make it
- Combine nuts, fruit, dates and raisins with 1/2 cup flour; set aside.
- In a large bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition.
- Combine the baking powder, baking soda, cinnamon, salt and remaining flour;
- gradually add to sugar mixture, beating until smooth. (Batter will be stiff.)
- Fold in carrots and fruit mixture.
- Spoon into a greased and floured 10-in. tube pan.
- Bake at 350° for 1 hour and 20 minutes or until a toothpick comes out clean.
- Cool for 15 minutes before removing from pan to a wire rack to cool completely. If desired, drizzle with icing.
- Yield: 12-16 servings.
