SPICY MESQUITE CHICKEN FETTUCCINE

- Ingredients: shopping list
- 8oz uncooked fettuccine shopping list
- 1 Tbs. chili powder shopping list
- 1 tsp. ground cumin shopping list
- 1 tsp. paprika shopping list
- ¼ tsp. ground red pepper shopping list
- 2 tsp. vegetable oil shopping list
- 1 Lb. chicken breasts cut into bite-size pieces, ( Marinated in Mesquite flavored marinade ) shopping list
How to make it
- 1)Cook pasta according to package directions, omitting salt. Drain; set aside.
- 2)Combine chili powder, cumin, paprika and ground red pepper in a small bowl; set aside.
- 3)Heat oil in a large non-stick skillet over medium-high heat until hot. Add chili powder mixture; cook 30 seconds, stirring constantly. Add chicken; cook and stir 5 to 6 minutes or until no longer pink in center and lightly browned. Add pasta to skillet; stir. Cook 1 to 2 minutes or until heated through. Move to a large serving bowl. Sprinkle with additional chili powder, if desired. Garnish with fresh cilantro and red bell pepper, if desired.
