How to make it

  • Break up matzo sheets into pieces the size of a quarter or half-dollar
  • place them into an 8-by 8 inch baking pan
  • Heat the apple juice or cider to boiling and pour it over the matzo, Allow the matzo to soften well, about twenty minutes
  • Break eggs into a large bowl and stir well, until fully mixed. They should be a uniform color
  • Drain the excess liquid from the matzo. If there is much liquid runoff, re-heat the liquid and re-soak the matzo, until nearly all the liquid is absorbed
  • In a ten- or twelve-inch iron skillet, melt 1/3 to 1/2 cup sweet butter, until it just begins to smoke
  • Add the matzo-egg mixture, 1 cup at a time, until the bottom of the pan is covered to a depth of 1 inch
  • Reduce heat to about 1/2 full, or as hot as you would for a regular omelet
  • Cook until the mixture begins to be firm enough to turn over, but not too hard. It should resemble a giant pan-cake
  • Flip the cake over in the pan, adding more butter , if necessary
  • Fry until firm, but not hard
  • When done, remove from pan, and serve
  • Drizzle with maple syrup and/or apple sauce
  • Eat! Enjoy! Look how you look! You're skinny as a rail. Take another piece, you eat like a bird. Don't get fresh to your mother.
