Vanilla fudge

    Does anyone out there have a recipe for vanilla fudge that actually tastes like..... vanilla? Most white fudge just tastes sweet, with no vanilla flavor at all.

    My mom used to make what she called 'Blonde Fudge', it was the recipe from the back of the Hershey's Cocoa can for Old Fashioned Fudge. When my mom made it, she just left out the cocoa and added about 1/2 teaspoon more of vanilla. It really tasted like Vanilla Fudge. Here's the recipe:

    Blonde Fudge

    3 c. sugar

    1/8 t. salt
    1 1/2 c. milk
    1/4 c. (1/2 stick) butter
    1 1/2 t. vanilla extract

    Butter 8 or 9" square pan, set aside.
    In heavy 4 qt. saucepan, stir together sugar, cocoa and salt; stir in milk.
    Cook over medium heat, stirring constantly, until mixture comes to a full rolling boil.
    Boil, without stirring, until mixture reaches 234 degrees on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Don't rest bulb of thermometer on bottom of saucepan!)
    Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature until lukewarm (110 degrees). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely and cut into squares.
    For variations: Add walnuts, pecans, hazelnuts, etc. Also, try leaving out the cocoa for a rich delicious 'Blonde Fudge', it's fabulous. The 'Blonde Fudge' is actually my favorite.
    I'm not sure about the prep and cook time; so please don't hold that against me. It may take more or less time, depending on your altitude and stove settings.
