i keep pesto frozen in ice cube trays...
i keep soup in one pint containers...
i keep sauce in one pint containers...
i keep veggies in large bags and just take out what i need as i go...

i cook extra meat when i grill and freeze some...

i just recently froze rice mixed with veggies in a loosely packed freezer bag...
    worked out very well...

One thing that I think is handy is to grate fresh ginger with a porcelain grater, which produces juice. I add the ginger juice and minced garlic together and put into freezer plastic bags, along with chicken breasts, and freeze. Other seasonings can be added as desired but I like just the garlic and ginger.
This could easily be portioned for one, as well as for a meal for a large family.
When done this way, the chicken has marinated for an extended time and is fully flavored and ready to cook, after thawing.
(The chicken can be full breasts or sliced or diced for stir-fry.)

when the sweet onions come in season... they are so cheap... I get about a dozen of them... chop then freeze on a cookie sheet, then bag. These are great when cooking, but I don't care for the texture in salads..
I always plant about 6 tomato plants.. when they get ahead on me, I scald them peel and chop and put in pint bags... So good for a fresh sauce.
I keep the stale bread... and when I have enough to make a stuffing... we roast a bird.
And the stuffing.. if you make extra... remove part BEFORE you bake it... freeze and it taste like fresh when you let it thaw and bake..It's good to freeze in muffin tins... about the right size for 1.
