Welcome to Counting the Way

    I welcome all who are concerned about what they and their families are eating - all those who need to be concerned about anything from weight loss, cooking for those who are trying to cook interesting things, but dealing with personal goals such as losing (or gaining) weight, to dealing with family members with diabetes and heart disease. I would like to see all kinds of recipes posted here - desserts, side dishes, main entrees - just include the nutritional info - it makes a difference!

    But more seriously, my mom is a type1 diabetic despite always being quite thin and I have a variety of recipes that I use and cook to help bring down her sugar and help maintain insulin levels without losing taste and excitement to the dish...I am sure to share them here!

I spent 3 years of my highschool career on Weight Watchers, losing almost 100 lbs after being obese (226 lbs at 5'7) since age 10, and through that journey I learned a lot about food, nutrition and enjoying life while maintaining a healthy lifestyle and mentality (not a diet).

    I've been fairly ill for the past two or three years, unable to eat meat, eggs, dairy or anything with a high fat percentage without extreme pain and without any medical explanation for it. I've been spending a lot of my time experimenting in the kitchen and finding things that I can eat or that my mom (who is also a healthy-minded person) will enjoy!

    Sarah, I admire how much you have done and in a small way can appreciate what you go through. Although I certainly don't have the struggles you face. I have the choice of eating just about anything I want, but have now broke out of the carb overeating/binging cycle - definitely not a great place for a type 1 diabetic to be!

I also want to thank all of you who have joined, and I welcome any and all others who are like minded - who want to learn about food, and make informed decisions, about what you choose to eat - and to be able to make, and eat great food.
