ASPARAGUS

    anybody?? I love asparagus, and when it's in season I get a lot. BUT, I sure can't get it right when I freeze it. It always is slimy and yukky. If I blanch or not.
    Anybody have luck with it?

    Most vegetables cells explode from the freezing process and because of that unfreeze on the mushy side. Suppose it's ok if you are using the veggies in a stew or something like that and are adding the veggies for flavor instead of looks. But for a standout standalone side dish, canning is the way to go, and it frees up space in the freezer for other things.

    But I like your suggestion of throwing the asparagus in a soup or stew. (that way my husband likely won't know he's having it).

    O.K. I have 30 pounds of fresh asparagus on the way. I do this every year. The key is fresh. By the time it gets here in the winter in Canada it is quite old, expensive and you are throwing away lots when you snap it. I clean it snap it. Meaning take the top and bottom and where it snaps is where the top part is fresh. Blanch for 2 to 3 minutes then dunk it directly into freezing (ice cube water). Let cool and put in a colandar. Pat dry and put in fridge while doing the next bach and on. Bag each quantity you will need in freezer bags. Making sure you remove as much air as possible. Freeze and it is a treat any time of the year:)) I hope this helps.

    I do what Good4u does but lay them out on baking tray first. That way I take out only what I want and hubby likes in omelets.
