    Ardtara Irish Soda Bread
I was quite surprised with this bread it has so few ingredients in it. The crust was quite hard but inside it was very dense and tasty. I had mad a very large pot of vegetable soup and it was great to soak the juices up with. I used soured milk instead of buttermilk.

I like the colour on it! :)
I found with my loaf the crust got softer the next day. Did you notice that with this one?

Thanks. Yes, I did Shona, b/c I wrapped in Saran Wrap but it still has a thick crust. I bet if I put a pan of water in the oven below it while I bake it, maybe it wouldn't be as hard.

So Joce, you actually made two types of Soda bread this weekend? You're an ambitious lady!!!! If you had to choose between this one and Phwriter11's which would you choose? :)

I always use soured milk instead of buttermilk, not sure how much it changes anything, but it always seems to work out okay! Looks so good :)

Thanks, everyone. In answer to your question, Janet. Both loaves of bread are good but I prefer this one. It is dense and just has a better taste.

I would try baking it at 375F next time Joce and hopefully the crust won't be so hard that way. (rather than the two dif. temps the recipe calls for--most newer overs retain heat better and you don't need to do it that way) I noticed a range of oven temps in soda bread recipes, some at 350-400F--so going in the middle seems like a safe bet, lol ;)

Thanks for the info, Shona. I am going to give this one a second try with your ideas.
