Bacon Cheeseburger Meatballs

    In honour of "Keni Cooking Day/Month" :) I decided to try out her recipe for
    Bacon Cheeseburger Meatballs
    as part of our Superbowl Snack Line-Up. As always, Keni's recipes make A LOT, so I halved it since there's just two of us.

    There are 19 ingredients in this recipe including what goes into the dipping sauce. I liked the addition of the jalapeno and the sriracha sauce. Next time I'd leave out the tomato and I'd use finely chopped dill pickles instead of the pickle relish which I found a bit too sweet.

    Hubby enjoyed these. They didn't hold together as well as I'd have thought but perhaps again, it's because of how many things are in there. :) It's a very juicy meatball. I baked them on a rack sitting on top of my broiler pan. 30 minutes was the perfect cook time. I couldn't really taste the cheese or the bacon.

    I have a good sized dish still leftover but I think they'll freeze well and I can pull it out next time we have company and include it on an appetizer tray. I think kids would get a kick out of them.

    I bet that would taste great with your Heinz 57 Dip too!!
    I'd leave out the tomatoes and relish too, personal preference ;) It looks delicious and fun for the kids!

    Keni's dip is very similar to my Heinz '57 dip you're right Shona. Next time I'd add even more ketchup to the dip mix. The Sriracha was nice though. :)
