Banh Mi

    I've never had a banh mi with chicken before, only pork. And this was a great sandwich!! I think the marinade is fantastic, and something you could use for any protein and even serve it over rice instead of a sandwich. Just make sure to not marinade the chicken longer than 2 hours because of all the vinegar in there! (You could do this overnight just by omitting the vinegar and adding it a 1/2 hour or so before cooking)
    This does require a little bit of prep time, but totally worth it! I recommend using a proper brine for the daikon radish rather than just soaking it in vinegar. (There are recipes for pickling daikon and carrots for banh mi, some use chilis and citrus peels but most are just equal parts vinegar, water, sugar and a sprinkle of sea salt.)
    I used individual Italian loaves, around 5-6" long. They are a bit softer than a French baguette and easier to chew. (Though you could soften the baguette by placing a damp paper towel over the crust. Place it in a sealed bag for a little while before warming it up).
    I did use the freshly grated carrots called for (instead of pickling) and added a few slices of cucumber. And I like to load the sandwich with tons of cilantro!! Some srirracha in the mayo and a lime wedge would make this a perfect sandwich in my book! But I think it deserves a solid 4 and a half stars as is!
    As good as this was with chicken, I think I prefer it with pork-- and will try this recipe with pork next time. :)

    Thanks Diz! There are soooo many different recipes for Banh Mi, many call for grilled meat. This is great for the cold winter months and only requires one-pan cooking which I like! :)

A traditional Banh Mi which Vietnam has made famous, refers to a sandwich made in a single serving baguette (The French were heavily involved in Vietnam and part of their legacy is their breads and pastries) and filled with various savory ingredients. It`s often served with pate as well. I`ve had Banh Mi a few times but never made it myself yet. I think your pickled carrots would be perfect in it. Hubby and I are chicken monsters so I think I`d try that first. LOVE Daikon radish. Love your idea of sriracha mayo. Great post. Thanks for sharing.

    When there are Banh Mi's on a menu, that's usually what I order! There is a place by us that gives you the option of chicken, pork or beef. Love your idea of adding sriracha to the mayo, yum!! Gorgeous little sandwich :)
