This is a soup I have made numerous times with great success.

I have reviewed it once before in the "Soup Again" thread but never in IMI and it is good enough that it deserves to be shared as much as possible. :)

As a kid growing up I was raised on Campbell's soups and Campbell's Beef and Vegetable Barley was one of my favourites. This recipe tastes just like that. Seriously.

Once I made it and didn't have any celery but it was still awesome. Once I made it with stewing beef and once with tenderloin steak cut up into little bits. Once I subbed the can of tomatoes with four tomatoes and a can of tomato sauce and once I accidentally added 1 cup of barley as opposed to 3/4 and in all those instances it has always turned out wonderfully. I now tend to use 3 900 ml. boxes of beef broth instead of just water and beef bouillon cubes but I also do add some beef bouillon cubes if the flavour just needs a bit more oomph.

It's a yummy, hearty soup, perfect for fall and winter days and I will make this recipe again and again. Try it, you'll love it. :)

Nothing like hot homemade soup on a cold day - yum! This sounds very versatile and I bet you could even leave out the meat for a vegetable version.

Our soup chef at the restaurant I worked in made the best Beef and Barley soup. I was never able to recreate it at home! I will have to give this a try. :)
