Beef Barley Soup

    Excellent soup! The whole family loved it!
    When I saw the review Chuckieb gave it I knew I had to try it. (Beef Barley Soup) The spices really intrigued me. It has chili powder and allspice in it. Most Beef Barley soups I've seen have thyme, garlic, bay leaf etc...But these spices give it a deep, rich, warming flavour. The aroma is amazing! I could really smell the allspice and was a little worried that the flavour would be overpowering, but the taste on the palate is much different then the aroma. The allspice and chili powder go wonderfully together and are almost indistinguishable in this recipe.
    I didn't have beef bouillon cubes, so I use 2 cartons of low sodium beef broth (900mls) and 200 mls of water to make up for the 8 cups of liquid called for. To add the extra beefiness the bouillon cubes give I used one tub of Knorr concentrated beef broth which equals a bouillon cube. I used stewing beef and cut the cubes into smaller pieces with kitchen shears. Everything else I followed exactly and wouldn't change a thing!
    The potatoes and barley make it a very hearty and filling soup. I served it with homemade buns but I preferred it with soda crackers. It's so filling you really don't need anything else with it. I look forward to eating the leftovers tonight!
    This will be the only Beef Barley soup I make for now on! :)

    Yum, your photo makes me want a bowl right now Shona. I can't believe I forgot to mention in my review of this soup that I didn't add the spices, and never have any time I've made it. I too was worried as I don't think Campbell's beef with barley soup contains neither allspice nor chili powder. Glad you still liked it after adding them. :)

    Lol, too funny Janet! I wondered about the spices because it didn't seem like something you might have added ;) .Maybe try half the spices next time and see how you like it? The spices really permeated the meat more anything, but we all loved the flavor. The aroma was very reminiscent of Ketchup and Worcestershire sauce (since they both have allspice in it) When I asked everyone what they thought I put in it, the kids said ketchup and my DH said Worcestershire! ;)

    I've been making this in the slow cooker lately. It's perfect for the slow cooker. I put it on high for 4 hours, and add the barely and potatoes halfway through and it's perfect every time! The spices mellow out more in the slow cooker too, so if you're afraid of the allspice and chili powder, try it in the slow cooker first! :)
