Beef Barley Soup

- 1-2 tablespoon vegetable oil shopping list
- 1 lb beef stew meat shopping list
- 1 onion, chopped shopping list
- 2 carrots, peeled and sliced shopping list
- 2 stalks celery, chopped shopping list
- 8 cups water shopping list
- 6 beef bouillon cubes shopping list
- 1 (14 1/2 ounce) can tomatoes, undrained, broken up shopping list
- 1 teaspoon chili powder shopping list
- 1 teaspoon allspice shopping list
- 1 teaspoon salt shopping list
- 3/4 cup uncooked barley (not quick-cooking) shopping list
- 2 cups peeled chopped potatoes shopping list
How to make it
- Heat oil in a large pot.
- Brown beef.
- Add onion, carrots, celery, water, bouillon, tomatoes, spices and salt. Stir to scrape up browned bits on the bottom of the pot.
- Cover. Simmer over low heat 1 ΒΌ hours.
- Stir in barley and potatoes.
- Cover and simmer 45 minutes longer, stirring occasionally.
- Add water to thin if necessary.

Made it several times in the slow cooker now. I used 1 less cup of liquid and it turns out perfect. I still browned the beef and onions first. Cooked on high for 4 hours. Halfway through adding the barley and potatoes. Perfect!
