Soup Again III

    Starting a third string in a series of soup recipes. The link back to the second string is Soup Again Ii. Please keep posting those made and reviewed new soup recipes here.
    It is cool weather time and there certainly has been an up-kick in new soup recipe posts being added to the recipe base here at GR.

    Did from scratch the black beans and pumpkin. Also had to make up a recipe for one of the spices: Ancho Chile Powder
    Everything on the recipe came out exactly to spec. It is a thick soup, almost a stew consistency, but will still soak up some crackers. Added a couple pinches of salt. Doubled recipe.

    This is a good onion soup albeit a tad sweet for my preferences. I would cut back to half on the honey. Parmesan toast floated in the soup takes some of the sweetness away so the savory can be tasted.
    Used Classic Beef Broth as the liquid base.

    They are a microwave safe dish. Got a couple of them from Walmoms a few days ago. The inner bowl gets hot but the outer bowl does not. Great for carrying around freshly nuked stuff. First chance I had to show off the bowls.
    Mother just had her bowl of the soup. Came all the way over to the other end of the house to tell me how good the soup was.

    A great stew. Recipe comes out exactly to spec. Good flavor. It was already thick so I didn't have to add the flour slurry. Ate it straight up without the benefit of rice or noodles.
    Added a little salt in the end but not too bad.

    Should have cut up the salt pork a little more. Didn't have to add any salt as the beans were soaked overnight in a brine and the addition of salt pork had the minestrone seasoned well.

    Believe it serves at least twice 6. Wonder if the recipe should read 6c chicken OR 6c beef stock. That would bring the servings down to six.
    Used the minimum measure of red pepper flakes. Could have goosed it up more but I'm serving to someone still with tonsils.
    Made 40 meatballs with my big meat hooks.

    Good recipe. Unfortunately I didn't have any celery.I chopped the stewing beef into little bits. I subbed the can of tomatoes with four tomatoes and a cup of tomato sauce and I accidentally added a cup of barley as opposed to 3/4. Instead of 8 cups of water I used 3 - 900 ml. boxes of Beef broth and 7 envelopes of Oxo Beef Bouillion. It's a yummy, hearty soup. I'll totally make it again.

I always think homemade is better than Chinese takeout that I refuse to order it because I can whip it up in like 10 minutes lol!     No that's the egg lol, I probably didn't stir them around enough to make TINY strings like Kaylia. I actually do like the kinda bigger egg bites though, something I can get on my spoon :). I think the cornstarch just thickens the broth up a bit and that's it. It is very delicious though, the green onions make it!

Kaylia's broth looks cloudier?/crearmier and yours Michelle looks more how I would expect it to look, it just being a Chicken broth base. Thanks for pointing this one out. I was on a search for a good cauliflower soup with no potatoes and she delivered this delicious recipe to me :) I like how it has no cream as well..which made this pretty light and very healthy. I did triple the garlic, but that's my own preference cause I like the stuff! Good on it's own but I did dip a couple Wheat Thins Flatbreads into it which was so yummy!! Have leftovers waiting on me in the fridge for lunch today :)

    this week. It was A-ONE FANTASTIC! I'd only just learned about Cioppino two years ago when my husband and I were in California. Someone had recommended we try a bowl from a certain restaurant but when we went it came with a $35 price tag, so we went across the street and shared a wood fired pizza instead. :) So....I was pretty curious to give it a try. The broth is spot on. I'm pretty new to cooking with fennel as well but it certainly adds a lot to the recipe. Cioppino originated in San Francisco. It's considered an Italian-American dish, traditionally made with the 'catch of the day' and in SF Dungeness Crab is an integral component. I love that Marie says in her intro that she and her husband used to make it when they were vacationing on the Coast. The recipe makes a very large pot. Which makes for very happy people!

    It's a good tasting hearty soup for an inclement day. Very thick. Doesn't need crackers or bread.
    This recipe has been reviewed a couple of times in the IMI group, and even by me, but until now has not been added to the soup again string.
    Used a raw potato instead of canned.
