    Blueberry Bread

    This is delicious! Rate it 5 stars even though my account has a glitch that won't let me attach stars. Cane together in a flash. Easy release from pan with parchment paper strip in bottom. Fresh blueberry taste, not too sweet---- perfect with my iced coffee!

In my original IMI post I stated that the colour was dark and I thought it was the brown sugar. But after making it again I realized it's from the baking soda. I use to make another blueberry bread all the time and the cake comes out super white. This cake comes out pale yellow, almost like it's corn bread. Baking soda can brown, just like in cookies (if you left soda out of cookies they would look pale!) So it's most likely that, and perhaps the brown sugar in combination.
    But, really it shouldn't matter all that much!! It tastes great!! I just bake for family or friends anyhow. If you did want to make this for a bake sale, then I would leave the soda out and use all baking powder. It won't ruin the texture at all and I'll try it next time just for scientific purposes, lol ;) I put two pics on the recipe page, they don't look that dark in the photo but in real life it's much more "yellowed".

    Looking at your photos, I see what you're saying about them being kinda on the dark side, Cosmicmom. Since glass pans can effect color and texture, maybe it's from the glass loaf pan you used. When I use my dark gray Chicago Metallic cake pans, I have to turn my oven down 25 degrees to keep things from getting overbrown, and it's the same when using glass. Try that on your next go and see if the bread comes out lighter.

    Oh no, it's def. not the glass pan! That would only affect the outer crust and not the interior. I only meant the interior of the cake was quite yellow compared to a snow white cake. I should have made that clearer, sorry if I confused anyone there!
    I'm very picky with what I bake in and glass is the only way to go! ;)
    I've used my glass pan for years and never had my snow white blueberry bread turn dark so I know it's not that. My crust did turn a little darker because my new oven needs calibrating, I had to cook this for 15 minutes longer then I did the last time I made this recipe in my old oven. Both ovens returned the same yellow interior.

    Soda needs something acidic to activate it. In this case it would probably be the sour cream. However, many quick breads/muffins etc...only use eggs and baking powder as their leavener. In this bread recipe I would use at least a 1tsp of baking powder, even up to 1-1/2 for that amount of flour and leave out the 1/4 tsp of soda.
    But please make it as the recipe states the first time, there really is nothing wrong with the taste how it is! It's delicious! ;)
