Made for IMI2's November 2018 "Roots, Tubers, and Bulbs" challenge.
Carrot Apple Ginger Juice

Great combination of flavors and I love fresh ginger so even better. I have a high-power blender and prefer to use the whole vegetable/fruit so I blended. I cut the recipe into 1/3 which was plenty enough of a serving for 1 and added about 1/2 cup ice and 1/4 cup water for desired consistency.

I love love love carrot juice! I like that there's no sugar in this, and the ginger must give it some zing! I usually make a carrot-orange juice but I have to add some honey or sugar to it. I guess the apple sweetness it enough...I'll have to try it! :)

It was good and I too usually blend carrots with oranges but add some grapes for the sugar because the oranges sometimes are not sweet enough. Using a sweeter apple would be best.

Yes Janet, the glass is by Bodum. I love them because they don't sweat. I normally wouldn't use one for a smoothie but it worked to take a picture.
Even with a Vitamix blender blending carrots smooth is challenging. It was drinkable smooth but not juice smooth.
It's green all year round here DIZ. We even have butterflies flying around all year and flowers blooming.
You must try adding some carrot to a smoothie Manella, it's good!
