    Chinese Chicken With Asparagus
    by Littlesponger the other night for dinner. I didn't have any asparagus on hand but I did have some bok choy and some snow peas, so I thought I'd just sub those instead. I used button mushrooms and a yellow onion.

    I marinated the chicken in the Ponzu mix for probably an hour. After cooking the chicken and the garlic I had a lot of nice brown bits on the bottom of my pan, and not wanting to waste that flavour I used a couple of tablespoons more of the Mirin rice wine and deglazed the pan before adding the vegetables.

    The chili garlic sauce adds a nice flavour (not hot, I could have added more) and the chicken really does absorb a nice flavour from the ponzu sauce, ginger and rice wine marinade.

    I didn't add any cornstarch. I had a bit of juices but nothing major. Ate as is and skipped the rice as we're trying to watch our carbs.

    Hubby liked this a lot. I'm not a stir fry fan at the best of times so I wasn't as keen on it, but that being said, I do plan on making this again as I'd like to do it as the recipe says with the asparagus. I think it would go really nicely and be a nice spring dish.

    Won't add my picture to the recipe since I don't have asparagus in there. :) I'll do it next time.

    Looks so delicious! In stir fry's, to me, you can pretty much add or take away any vegetable and still get relatively the same flavor, so the bok choy and sugar snaps sound like a great sub to me! I love Ponzu, I am actually out right now, so I need to pick some up next time I go to the store!
