Chocolate Cherry Cookies

    "Made for the December 2016 Cookie Swap"

    These are a super chocolately, fudgy, rich cookie. The cherry in the middle is perfect and cut's through that richness. I have to admit that I'm not a big chocolate person, though once in a while I do enjoy a fudgy bite. So it's not something I would make regularly. But if your a chocoholic or want that fudgy chocolate treat on your dessert platter instead of fudge or a brownie, than this is perfect!

    This made 3 dozen cookies. I had a lot of leftover topping, so I figured I didn't put enough on when I baked them. So I dolloped another spoonful on top after they were baked. I let it set up at room temperature instead of re-baking the topping, and it worked out perfectly. My dough might have been a little too dry, and the cookie dough cracked while baking. Next time I will wet my hands while rolling them to prevent that. (unless that's how they're suppose to look?) Although they might look dry, the fudgy topping made them soft and chewy!

    The kids LOVED these! And my DH took 2 dozen to work and they were devoured by all the guys!

    Yeah, Lol, it is shiny in the photo! I think it dried more matte, but it does stay a little shiny. Now that I look at the picture, wouldn't this look so cute with some white snowflake sprinkles, or a silver dragee (sugar pearl)? ;)

    Yay, so happy you enjoyed them Shona!! I need to remake make these again, it's been forever, but I do think the cookie part is supposed to be slightly dry because of the gooey glaze and cherry :) Your cookies look fantastic though, glad everyone loved them!!!

    Thanks Michelle, I wasn't sure if the dough was meant to crack around the edges. It is dry in my house and I though my flour might be too dry!

    Janet, I think the jarred dark sweet cherries would work. Or even the tart cherries; the chocolate is rich so I think the tart cherries would be a nice contrast. Thawed, drained frozen berries should work or dried cherries that have been plumped in hot water. Then you could use the drained liquid from the frozen berries or the plumping liquid from the dried cherries in the topping. But the jarred cherries would be the easiest to use :)
    Fresh might not work as too much moisture could come out of them while baking?
