I deleted my original post on this on accident!!

I was just thinking the other day about how easy it would be to delete a thread accidentally, and I did it! Whoops! The creator of this site really should have added an "Are you sure you want to delete?" button after you press delete. But NOPE! Anyway, my little boy loved these gluten free muffins and has been eating one every morning since I made them :) Used Kerrygold butter in place of the coconut butter and coconut sugar in place of the powdered. YUM!!
