    Coconut Fat Bombs
    Recipe made for IMI2's May 2019 'Tropical' recipe challenge.

    My review: Incredibly delicious!! I love anything coconut and these are ideal to snack on when needing to curb your appetite. Healthy too because they are rich in healthy fats your body needs. I opted not to use the cinnamon and nutmeg called for only because I wanted the pure taste of coconut. I used a candy mold and popped them in the freezer as opposed to rolling. Once they were frozen I then unmolded them and then when they softened just a bit I pressed the tops in unsweetened shredded coconut and then into the fridge to be kept. These are really good!!
    (I used full fat Thai Kitchen organic coconut milk which is nice and rich and not at all watery. Mix well.)

    These were hard to get a good picture of. Maybe if I had a dark plate it would have worked better.

    Next time I make them I'm going to make them 'bark' style. Just make the mix, pour onto a sheet, sprinkle with dry coconut, freeze, then break apart. If I just pop them in the fridge they won't be hard enough to break but once broken I can then store them in the fridge.

    Michelle. Don't even bother with sweetener, there is so little of it you really don't need it. I didn't use any.
