Country Chicken Pot Pie

    I was specifically looking for a chicken pot pie recipe that used poultry seasoning or thyme and had carrot, celery and peas. And this had it! To be honest, this was the last recipe I looked at over hundreds it felt like! I was just about to give up when on my 6 or 7th attempt at finding a recipe this was on the last page, I said "if this this doesn't look decent I'm going to give up!" LOL!
    This recipe doesn't use milk, cream, butter, or flour--just cornstarch for thickening and chicken stock. At least it didn't use canned soup or canned vegetables so I was okay with it! ;)
    I did however use some onion. Rather than use a whole cup of diced carrots I used 3/4 of a cup and a 1/4 cup of diced onion. I sautéed that with the celery instead of steaming it with the potato and carrots. And then added the poultry seasoning, chicken stock and cornstarch to that to make the sauce. For the chicken, I used a small rotisserie chicken from the grocery store and got exactly 2 cups of chicken from it.
    I used ready-made deep-dish pie shells and the filling was just perfect-- mounding in fact, just to the point of over-flowing. So I'd use a deep dish pie shell or a homemade one so you have that extra crust to hold it all in. I didn't have enough crust around the edges to flute, just enough to pinch together! And thankfully my chicken measured exactly 2 cups as there was no way anything more could fit into the pie shell, so just make sure to measure everything in this recipe! :D
    I like the technique of using the egg yolk to brush on the bottom of the shell before baking, and then adding a bit of water to it for brushing the top. The poultry seasoning adds great flavour but next time I might use a bit more, or add fresh herbs like thyme or rosemary. And maybe sauté a garlic clove with the onion next time as well. Overall a great recipe that can be tweaked to suit your tastes.
    Forgive the unappetizing photo, I knew I had to sneak that picture in before the family came back for seconds and devoured it! I hoped I might get a picture when it cooled and set but that never happened, lol! ;)

    I kept putting off making one until I finally bought the frozen pie shells, lol... that just made it so much easier and I knew I couldn't put it off anymore! ;)

    This is a chicken pot pie for sure! Thanks, Shona, for testing it for us and making adjustments. WOW! I think this has great possibilities with perhaps just a puff pastry top in individual ramekins. Like you I am not crazy about frozen pie shells ... Got to try this this winter.

    Great photo, Cosmicmother! As I've said to others, pot pie is not supposed to be pretty. It's comfort food! Yours looks warm and filling. How interesting that it doesn't use any dairy products. I imagine it has an intense chicken flavor. I do love poultry seasoning.YUM!

    It had great chicken flavour Diz! I was surprised how many chicken pot pie recipes on here didn't use any herbs, my parents always used poultry seasoning so that's what I'm used to....good ol comfort food! :)
