English Muffin Bread

    After reading Linda's lovely recommendation of the English Muffin bread I really wanted to try my hand at it as well and so baked up two loaves of it yesterday afternoon.

    English Muffin Bread

    I followed the instructions to a 'T' although I couldn't find bread flour at my grocery store so subbed all-purpose. I'd have to do a taste test with bread made from both flours to see if there was any discernible difference but not knowing how it is with bread flour, I'd say the all-purpose worked out just fine.

    My bread pans were a little smaller than the 8" x 4" that was called for. Mine are 7 1/2" x 4" but they worked perfectly. I did try to cut a slit down each loaf prior to putting them in the oven, like Chefloren did but mine weren't as distinct as her's when I brought them out of the oven. The cook time was bang on and I removed them from the pans immediately. They took a long while to cool to room temperature. I got two small loaves from it.

    It's a heavy, dense loaf. I like the cornmeal dusting on the outside. Hubby and I both grabbed a piece of it when it came out of the oven which was most delicious, (Hubby actually had another one a little while later too. He's a sucker for home made bread) and then I toasted two slices of it this morning and topped it with poached egg and ham. DEEEEElicious!

    I'll totally make this recipe again. It's a keeper. Can't wait to try this toasted with jam! :)
