German Hot Potato Salad

    German Hot Potatoe Salad/saved
    for the IMI11`s Octoberfest Challenge and as a side to Semi`s
    Parmesan Pork Medallions (which is a great recipe that I have made a few times before and incorporated in to our regular rotation)

    The Potato salad was marvelous. I`m not sure that I ever made a German Potato salad before and I was really pleased with it. I halved the recipe as there are just two of us and we still have enough left over for another side dish. I am a dill pickle monster and of course LOVE it in this. I was worried the vinegar mixture would be super potent but it blended in so nicely with the potatoes and it had a very pleasant twang.

    I`m afraid I wasn`t paying close enough attention. The recipe said to cook the potatoes in their jackets and then cool them, peel them and slice. Well I cooked, cooled and then cut the potato in half and scooped the inside out. Oops. So mine won`t be as neat and pretty as Henrie`s but it was way easier and tasted the very same. LOL. :)

    Make this. It`s yummy.

    Oh man this looks good Janet! I haven't made potato salad in forever and this is making me want some :) I think your way of just scooping out the insides sounds way easier lol. I bet it still taste the same!

    Nice photo, chuckieb! It looks so good. I'm hit or miss with German potato salad. I'm like you when it comes to the vinegar. I see this one has a lot more ingredients than some recipes. A lot of good flavors in there. Saved!

    This recipe looks exactly how my in-laws made their hot potato salad! Always bacon, pickles, dry mustard, onion. Sometimes they would add some of the brine from the pickle jar in place of some vinegar or fresh dill from the garden! I'm saving this recipe to try! :)
