German Potato and Leek Casserole

    German Potato And Leek Casserole by Midgelet

    I knew I had to tweak this recipe as the white sauce amounts looked off balance. It calls for 1/3 cup of flour (40 grams) and only a 100mls of cream. I looked online for similar recipes, mostly German recipe sites. But couldn't find the exact recipe that Midge posted. Although I did find similar recipes that used cream AND milk. So I kept some milk to the side while making this.
    I used 4 Bavarian sausages for the smoked pork called for. They are the white sausages you usually see this time of year and are a little milder than Bratwurst's. (In Germany they are known as Weisswurst, and I always remove the skins before eating. I boiled them for a few minutes with the potatoes and removed the skins before slicing and adding to the casserole.)
    I also used Swiss cheese, which seems traditional. I used 150 grams (5oz) that I grated, and it fit perfectly over the 9x13" pan. (The recipe calls for 4 Tablespoons or more)
    I used 3lbs of yellow potatoes (Yukon's), which is just over the 1kg called for. It worked out to 10 small-to-medium potatoes. And I did par-boil and peel them after cooking, and the peels slid right off! :D
    I sautéed the leeks and garlic in vegan butter first then added the flour and cream. For the cream I used lacto-free half-and-half. Luckily I had some milk set aside as it really needed it! I used 2 cups of milk and it made a nice medium white sauce. I think MIdge probably forgot to list the milk, and it most likely called for 2 cups. I also added a pinch each of nutmeg, mustard powder and paprika with the salt and pepper.
    The pictures don't do it justice as the ingredients are all pale coloured. But it was absolutely delicious! I didn't think the kids would like the Swiss cheese, but they asked for seconds! I served this as a main course with a side of Coleslaw.
    I will definitely make this again, with the extra 2 cups of milk of course. And perhaps use ham or bacon next time for a change up. :)

    It is just like scalloped potatoes except you par-boil the potatoes first. I like the texture this way, and it doesn't have to cook as long as scalloped potatoes either! :)
    If you like potato and leek soup you'll love this! The Swiss cheese gives it a nice nutty flavor too.

    Hey, Cosmicmother! What do you mean the pictures don't do it justice? You've got my mouth watering! I'm so glad you shared this. When I was growing up, my mom made the best scalloped potatoes and ham. They were so creamy! I never got the recipe and the few I've tried are nothing like hers. I'll bet this is it and I will venture a guess that she parboiled the potatoes just like you did. Who would have guessed? Thank you! Thank you! I think I will make this over the holidays when I'm on "food holiday" and can enjoy anything I want. lol!
