Gluten Free Peanut Butter Cookies

    I made these for a friend who cannot have gluten. Followed the recipe with no changes, I tasted one and they were very tasty but a bit too sweet for me. They baked up very nice with a bit of spreading so I would suggest 1 inch apart. I used a small ice cream scoop so they would be the same size, and I would make them again but leave out the chocolate chips. The recipe says serves 12 but I got three dozen and they were not small. The scoop i used was 1/2 inch wide. I have no idea why I got so many out of this but I think it’s great.

    I usually make the 3 ingredient PB cookie (PB, egg, sugar) and never seen one with baking soda, but I can tell from your picture they look thicker and sturdier! I will have to try it that way next time.
