    Grilled Chicken Breasts With Tomato Olive And Feta Relish
    Recipe made for IMI2's August 2020 "Chicken" recipe challenge.

    My review: Excellent combination of ingredients. I couldn't help myself and used sundried tomatoes instead of fresh cherry tomatoes but I'm sure fresh tomato would have been just as good. I didn't have mint but did have fresh basil and used it. Delicious way to dress up plain grilled chicken.

    I thought sundried tomatoes would work well with the olives and feta and it did. I like the combination so much so that I would make it and top off toasted slices of stix bread (like you would bruschetta).

Linda said it best when she said 'Excellent Combination of ingredients'. I used some fresh garden tomatoes my cousin just gave me as opposed to cherry. I really don't care for black olives so subbed green stuffed with pimentos. (YUM) Liked Linda's idea of the basil instead of the mint. Just think it meshes better. Didn't use 3/4 cup of feta, but just eyeballed it until it looked like we would like and I didn't add salt because the feta and the olives are very salty themselves. I added copious amounts of fresh ground black pepper.

    Hubby grilled the chicken breasts to perfection. WE loved this recipe. It's an awesome summery Italian entree. Will totally make again and again. Thanks Linda for bringing it to my attention!

    Sounds like a great recipe, I wish the family would like olives though! I wonder if capers or something else briny would be a good sub? Hmm...Though if I chopped up some green olives finely they probably wouldn't know it was there, Lol! ;)
