    Healthier Peanut Butter Chocolate Cups
    Recipe made for IMI2's February 2019 "Chocolate or Asian" challenge. This recipe was made for the chocolate part of the challenge.

    My review: OMG!!! One of the best things I've ever eaten! Most "paleo" chocolate just uses coconut oil but the addition of coconut butter (which is what I used) just puts it over the top! Coconut butters vary in quality and I bought a good one and because it had a natural sweetness to it I barely added any honey to sweeten it. Same with the peanut butter, I bought a really good natural brand that is ultra smooth and choose not to add any honey at all. Mine were like eating dark chocolate peanut butter cups. OUTSTANDING!!

I bought "Artisana Organics" raw coconut butter which is different than cocoa butter but I still got fantastic results and WOW, what a great product. I've bought coconut butter in the past and couldn't figure out what the rage was all about, now I know. I also buy "Maranatha" smooth peanut butter and it is exceptional in quality. Buy good ingredients, add honey to taste, and you won't be disappointed with how good these are. And if you are wondering, the coconut products do not make the cups taste like coconut because the cocoa (I used cacao) and peanut butter are rich enough.

    Wow, these sound amazing Linda!! I use the "Arisana" brand of coconut butter as well and love it in baking/desserts. I bet almond butter would work well in these too, I'm not the biggest peanut butter fan. My family is though lol! I can't believe how perfect looking yours turned out!

    Thank you! I really like these and like that I control the added sugar. Artisana brand IS really fantastic Michelle, my first time having it, I could eat spoonfuls straight from the jar. And I'm sure almond butter would work well. If it's too stiff to spread just warm it up.
