Homemade Melt-in-your-mouth Dark Paleo Chocolate Recipe

    This wasn't exactly a "recipe challenge" for me since I make these chocolates often. I do think they are worth mentioning here though since one of this month's challenges is chocolate.

    Note: I believe Allrecipes edited the recipe to call for honey (instead of maple syrup). I always make these chocolates with honey simply because I always have it on hand and that is how I started making them.

    Here is my review from Allrecipes:

    This "Homemade Melt-In-Your-Mouth Dark Chocolate (Paleo)" is out-of-this-world delicious! Oh my goodness! I used flavorless "refined" organic coconut oil (not "virgin" coconut oil) since I don't like the characteristic fruity taste of coconut oil in most recipes. My coconut oil was liquid at room temperature, so I wasn't going to bother to heat it. I found that the honey kept separating from the coconut oil when I tried to mix them at room temperature. Then I remembered something I learned in chemistry class: liquids are more soluble at higher temperatures. I heated the honey and oil together and they still didn't mix together very well (although better). Then I remembered something I learned in English class: read the instructions! Everything mixed together well when I followed the instructions. I put my organic dutch-processed cocoa powder through a sieve to make sure that it was free of all lumps. I also made my chocolates in a paper-lined mini-muffin tin (yield: 12). Important Tip: I found it much easier to remove my chocolates from the mini-muffin tin when they were freshly set after 1 hour of refrigeration (easy removal) rather than after they were well hardened (pry out with a knife).     Yum! Great idea to use a mini muffin tin with muffin liners! I have a mini muffin tin but I hardly ever use it.
    I wonder if honey makes it more solid than maple syrup?

    Linda - BIG SMILE! I don't think it is a great picture Linda, but it does present an idea! I noticed in the pictures on Allrecipes several people used mini-muffin tins to make these chocolates. There is a really cute picture where each chocolate made that way has a different topping (walnuts, marshmallow, sesame seeds, almonds......I am thinking I would like raisins). I was tempted to steal that photo and post it here.....but then my conscience said "no." I never intended to represent it as my own though. Also, I think at least one of those pictures uses pretty muffin-liner papers from the craft shop. I love that idea! :)

    CosmicMother - I have never made them with maple syrup, so I don't know. I use my mini-muffin tins for freezing herbs with oil. I like that they are sitting in a paper so I can just defrost them in that. I used to use ice-cube trays, but I like the mini-muffin tins better.

    Mommy - You make me laugh! I guess when I wrote the review I just wanted to point out that I didn't follow the instructions (I don't even usually look at them or even write them in my own recipe file). In this case, it really made a big difference as to the recipe working for me! :)
