    Individual Shepherds Pie With Scallion Cheese Potato Crust
    last night for this month`s `Root Vegetables` Recipe Challenge. Both hubby and I LOVED it. I don`t think I`ve ever made Shepherds Pie before and feel lucky to have come across this one to make as my first.

    The meat mixture is full of flavour. I did not add the pinch of cinnamon and I only had dried parsley, not fresh. I used `Better than Bouillion` Beef stock paste which is awesome.

    My husband hates Yukon Gold potatoes with a passion so I just used Red skinned potatoes. I had barely a cup of old white cheddar cheese on hand so put it all in to the potato mixture and didn`t sprinkle any additional over the top.

    Luisa says that this recipe serves 8. It calls for one pound of ground beef. Luisa does a lot of catering so I think that the serving size she quotes is for an appetizer or buffet portion of shepherds pie, not a main entree size. I divided the mixture in to six portions and hubby said he`d still prefer more in his portion next time. LOL. Next time I make it, (and that`ll be soon), I`ll just divide it in to four portions.

    If you look at Luisa`s photo the top of her Shepherds Pie is so pretty. When I looked at it I thought that perhaps she`d put the potato mixture in an icing bag and piped it on top so I tried that. The recipe just calls for 2 tablespoons of butter to mash the potatoes with. I always use butter (margarine) and evaporated milk and I did that with this. Luisa uses a potato ricer and I just used a masher. My potato mixture was WAY too thick to allow me to push it out of the icing bag even though I had a fairly large tip. I don`t even know if I didn`t use a tip if I would have been strong enough to push it out of the bag. Maybe I`ll try that next time. I ended up just patting the potato mixture on top of the meat and then scoring the top with a fork.

    This was super tasty and I`m delighted to add this recipe to our regular winter rotation. :) We ate two of the pies last night and I put the rest of them in the freezer for later.

    Luisa I used my 2 cup Le Creuset Mini-Cocottes. I filled them half full and had four of them and then had a little tinfoil loaf pan that I put the rest of them in to. HOW DID YOU MAKE THE FANCY TOP? :)

    Oh wow, your first Shepards Pie Janet! It's one of my husbands favorite meals :) I was thinking she used an icing bag too, but I could totally see how that would be difficult to get through. Hmmmm...maybe she'll pop in here and tell us :-D. Love your picture and what a fun recipe!
