Italian Sausage Soup.

    A tasty soup, I used mild Italian Sausage. I make my own broth so I used that, I did not have great northern beans so I used black beans.I found 20 min. not long enough for the flavours to meld so I simmered it for 40 min more.It is a good soup but needs more flavouring.Half way through cooking I tasted it and found it a bit bland.I added about a tablespoon each of
    minced rosemary, basil and sautéed some onion and threw that in.
    6-15 ounce cans ( 90) oz. sounds like a lot but it is not, some boils off and some is absorbed by the veggies.I did not add spinach, my husband can’t eat it.
    Rereading the recipe there is no onion, IMO, onion should be added with the sausage and garlic.
    I will make it again, we did enjoy it..

    Love your photo Eastcoaster! Too bad the soup wasn't flavourful enough initially but good you were able to rectify it! The addition of onion is a good one. I would have skipped the zucchini but kept the spinach as I really dislike zucchini. :)

    Chuckieb, i love spinach, hubby has gout and spinach is one food of many that would trigger a attack.Oddly enough zucchini does not bother him.

    I find the canned Italian seasoned tomatoes lack flavor too and always bump it up with Italian herbs. Good call on adding onions, that's a must in soups! ;) ;)
