Leek and Sausage Soup

    Leek And Sausage Soup by Chuckieb

    Wow, such a delicious soup! We all loved it!
    I love that it's not a potato heavy soup, it's a perfect balance of vegetables that give it so much flavour. The texture is silky smooth and creamy without any dairy in the soup. And I loved the keilbassa sausage in it. I've tried potato leek soups with ham, bacon and frankfurters in it, but the Keilbasa was fantastic and gave it a nice garlicky flavour.
    I didn't have any leeks though, so I used a whole bunch of green onions, using all the white and light green parts. And topped the 2 cup measure with one clove of garlic and yellow onions. Hoping that those flavours matched the leek as close as possible. It turned out delicious of course, but I'm sure the leek would be so much better! Can't wait to make it again with the leeks! :)

    It looks lovely Shona and I can see the Kielbasa peeking out. :) Nice sub for the leeks. I like Potato onion soups too so I don't think you can go wrong. A good soup for a wintry day!

    I bought more sausage to make this again next week. My kids really loved it and asked that I make it again. :)
