a while back and when I saw the recipe I was pretty sure it'd be something I'd like. And I was right. :) These are a really nice, neat, easy lemony shortbread with a yummy icing on top. I followed the directions without any changes with the exception of using margarine instead of butter. I'd bought butter for them but then realized it was hard and I'd have to soften it in the microwave. I already had a set back when I read that the dough was supposed to sit in the fridge for an hour. :)

I didn't halve my roll before putting in the fridge.My roll was exactly 1 1/2" in diameter but the entire thing ended up rolling out to 12" in length. It made 33 cookies for me.

The icing was exactly enough. My icing looks wetter in the photo than Michelle's but I did take the picture right after icing them. I brought some over to a girlfriend's today and have a second tray to set out along with dessert when we have guests over tomorrow.

I did actually add about 2 tsp. worth of lemon peel to the icing and I liked it. Next time I will add more to the dough as well as I do love that lemony flavour.

A yummy recipe which I will certainly make again.

So glad you enjoyed these Janet! I usually use a bit more lemon juice in the cookies to get a more lemony flavor :) I might try extra lemon peel as well. Love your photo! I can't remember if I took that picture after they had sat for a bit or not? My icing does look wet like yours at first though.
