Lemon Meltaway Cookies

    Made this for the Cookie Swap 2016

    The amount of ingredients in this whole recipe is spot on. Usually I have to add a little more /less flour to get a dough to come together, but this came to the perfect dough ball :) The cookies hold their exact shape from when you cut them and place them on the cookie sheet into baking. They are light and slightly crumbly and like the title states, melt in your mouth! There was the perfect amount of icing to cover every cookie. The lemon taste in both the cookie and the frosting really comes through, the kids, plus a friend devoured a couple of these each after school. YUM!!!

    They might make good cut out cookies Bakerme but they are pretty fragile, might break apart when trying to decorate depending on the shape. I only had one break, but I was VERY very careful :)

    That recipe sounds similar to a crumbly shortbread my Grandma use to make. I love lemon desserts/cookies etc..yum!

    Those look really good! I love delicate butter cookies that melt in your mouth. I'll bet the lemon gives them a light and refreshing flavor.
